Sauteed Asparagus with Shaved Almonds and Parmesan
Oh how I love thee!
This is one green food that nobody has ever had to talk me into eating. I simply love it.
My sister and I are always up for trying new ways to dress this delicious veggie up, just a bit. However, when she came up with this variation one night we have never opted to eat it any other way.
It really is that good.
So I thought I would pass it along in hopes that somebody else may find that they enjoy it as much as we do.
With that said…you’ll just need 1-2 bunches of Asparagus
(One easy way to cut the ends off, is to keep the rubber band on both ends, moving the lower band down toward the tips, and cutting it in one slice….it keeps it all from scattering and separating, and makes clean-up easy too.)
I put about 1-2TB Olive Oil in a saute pan, and season it with salt and pepper, depending on how much asparagus you are making. (Don’t make the mistake of thinking you need more oil than you really do…as the asparagus cooks, the natural juices will fill in where the oil isn’t).
Saute the Asparagus until it is done to your liking.
When it seems like it is getting close to done, I mince up about 2-3 cloves of fresh garlic, and push the veggies to one side, giving me some space to saute the garlic for a few minutes. *If you do this at the end, instead of the beginning, it will keep the garlic from burning and turning bitter…I really noticed a difference when I started doing it this way*
Sliced Almonds and Parmesan:
I like to use these almonds that I find in the salad section of my grocery store, called “Almond Accents”. I love the Roasted Garlic flavor (hhmm…garlic and more garlic! Do we see a trend?).
Layer the Asparagus with the Shaved Parmesan and Sliced Almonds, until it looks like you will get some in every. single. bite. Very important! 🙂
- 1-2 Bunches Asparagus
- 1-2 TB Olive Oil
- 2-4 TB Shaved or Shredded fresh Parmesan cheese
- 2-4 TB sliced Almond Accents
- Saute Asparagus in Olive Oil until it is cooked to your liking.
- Layer with Parmesan and Almonds
