Avocado Sunrise!

Have we talked about my love for these yet?

I honestly “LOVE me some avocados”!!!

Well, this guy would love nothing more than to somehow get me to eatFOUR eggs and oatmeal for breakfast every morning.

Pretty much not. gonna. happen.

Four eggs And oatmeal?

You have got to be kidding me!

However, I knew I could meet him halfway when he told me about this simple and easy way to dress up these eggs using an avocado.

Much like my other new “2 ingredient love“, this one keeps it simple….but tastes amazing!!

Avocado Sunrise:           


1 avocado
2 large eggs
1TB of parmesan cheesefor garnish
1 piece bacon, crumbled for garnish…add more or leave out to your liking!

Start by halving your avocado

Hollow out the avocado a bit more than the small hole that the pit leaves, to allow room for an egg to go in each side.

Place each half into a small custard-type of cup.

Place one egg into each half of avocado (I start with the yolk and then fill-in with the egg whites…however you choose to do it!).

Bake them at 425 for about 15-25 minutes, depending on how you like the yolk (I end up baking them on the longer end, but start at around 15 and check incrementally).

When they look like they are almost done, sprinkle the cheese over each top and bake until melted.

Add the crumpled bacon to the top and enjoy!!!

They are really, super delicious!

I put some seasoning salt and pepper on mine.

    I think this looks delish! I was wondering if this is a Trim Healthy Mama meal and if it is okay to eat a whole avacado and two eggs and still be on plan. I am thinking that as an S you should only eat 1-half of it. Thanks!

      Hi Heidi! Yes…only 1/2 for a THM s…I started trim healthy mama in March of this year…I really need to go thru and edit my old recipes so people don’t mistake them for THM!!! But this one would still work!! And it is delicious!!
